Shun Edo 9-Piece Knife Block Set Review

From the handle ergonomics to the blade geometry, no doubt Shun Edo knife set was designed to give the user precision and power. Anybody who has bought this set will attest that the way the handle is designed and the way it fits in the hand, it must have been made to give users superlative control and comfort. In this 9-piece set you will find six of the most popular Edo kitchen knives, a sharpening steel file plus a bamboo block for storing the knives.

The blades are forged from one piece of VG-10 super steel carbon and are well balanced to handle all types of kitchen work. Their blades’ ‘tsuchime’ hammered finishing leaves some air pockets that prevent food remains from sticking.

Just like the resin - impregnated Pakkawood handles of the Shun Classic 9-Piece Block Set, this set also has resin –Pakkawood handles that make the knives not only firm but also stable. The only notable difference is their round-shaped handles.

Unlike other traditional European made knives whose edges are sharpened to about 21 to 22 degrees, the Shun Edo knives boasts of 16 degrees giving them a razor-sharp cutting edge.  The blades stay sharp for a long time but if they become dull then you a honing steel file that is included in the set.

To protect their cutting edges, never mix them together with other kitchen wares as they will rub against each other and get blunt. Also remember to clean the knives after using and dry them properly before storing.

Another unique feature with these knives is their wide bolsters which enables the user to grip the knives firmly while at the same time preventing food from coming into contact with hands. These bolsters strengthen the knives and make them well balanced. Their widened bolsters also enable users independent of their height to use them comfortably.  These knives are made for everybody, whether you are a professional chef or just a simple cook, you can comfortably use these knives.

Though the handles are round-shaped, their butts are flat-shaped giving these knives an extra tool for crushing small ingredients. Unlike it is the case with the Saber F-12 knives and the Mundial 1500 knife set where handles are fixed with three metal rivets, the Shun Edo knives’ handles are moulded to the tang and therefore no rivets are used to fix it. Another thing is that the tangs are fully covered and therefore it is not easy to tell whether they are half or full.

Customers that complain about this knife set talk of the bulkiness of the horizontal knife block but none complains about the quality. It seems there is consensus amongst them that these knives are super sharp and that their handles are as comfortable as Shun knife set's. They also agree that the price of this set is also lower than that of other knife sets within the same range.

This knife set is aJapanese product designed by highly skilled engineers to offer you maximum comfort and flexibility. This is definitely a must have knife set.
